Grab a pot and bowl this one is gonna be worth it!! 1 tablespoon avocado oil ½ small yellow onion, diced 1 orange bell pepper, diced 1 jalapeño, seeded and finely diced 3 cloves garlic, minced 3 lbs ground turkey (85/15) 2 teaspoons salt ½ teaspoon black pepper 1 medium zucchini, cut into quarter moons 3 tablespoons chili powder 1 tablespoon ground cumin 2 teaspoon dried oregano 14.5 oz can diced tomatoes 1 tablespoon tomato paste 1 cup chicken broth 1 cup pumpkin puree Pour avocado oil in a Dutch oven or large stockpot heated to medium high heat. Stir in onion, bell pepper, jalapeño and garlic. Sauté for 2-3 minutes or until almost softened. Stir in ground turkey, salt and pepper. Cook, stirring occasionally, until turkey is cooked ¾ way through, leaving a few pink spots in the meat. Stir in zucchini, chili powder, cumin and oregano. Cook for 1-2 minutes or until zucchini has slightly softened and spices are fragrant. Add diced tomatoes, tomato paste, chicken broth and pumpkin purée. Lower heat to medium and let simmer for 10-15 minutes.
